Coffee Drying and Storage: Essential Considerations

July 28, 2022

Coffee lovers everywhere appreciate a perfect cup, and part of that perfection relies on meticulous drying and storage processes. Proper handling during these stages is crucial to preserve flavor and quality. Here’s what you need to know about coffee drying and storage to avoid common pitfalls and ensure the best results.

Risks Involved in Drying & Storing Coffee

Risks Involved in Drying & Storing Coffee

Sun Drying: Advantages: sun drying is a traditional method valued for its ability to produce high-quality coffee beans with a balanced flavor profile. Risks: The process is susceptible to unexpected rains, which can damage and contaminate the beans. Additionally, coffee beans are highly porous and can absorb external odors and flavors during drying. Best Practices: Use raised beds or well-maintained concrete patios to facilitate even drying and reduce contamination risks. Ensure proper coverage to protect beans from rain and pests. Mechanical Drying: Advantages: Mechanical dryers offer more control over the drying process and can be used regardless of weather conditions. Risks: High costs and the need for technical expertise to operate these machines can be a drawback. Mechanical drying may also affect the flavor profile differently compared to sun drying. Best Practices: Regular maintenance and calibration of drying equipment are essential to avoid inconsistencies.

Contamination: Improper bagging can lead to contamination from external odors, moisture, and insects. Bag Types: Burlap bags are traditional but may not always offer the best protection. Super grain bags, which are gastight and water-resistant, are preferred for better preservation Best Practices: Bag coffee early in the morning when it’s cooler to minimize moisture absorption. Opt for eco-friendly, high-quality bags that protect against moisture and pests.

Drying Techniques

Drying Techniques

Techniques: Coffee is dried on raised beds or concrete patios. Raised beds allow for better air circulation and more even drying, while concrete patios are commonly used but require rigorous cleaning to avoid contamination. Monitoring: Ensure uniform drying by regularly turning the beans and protecting them from environmental contaminants.
